Governor’s Plate at Colorado State Fair: Colorado food trucks to showcase Colorado corn and honey

Five food trucks from across Colorado have been selected to compete during the 2025 Governor’s Plate competition at the Colorado State Fair at 5 p.m. on Tuesday, August 26, 2025, at the State Fairgrounds in Pueblo. 

The Governor’s Plate competition celebrates the best of Colorado agriculture: fresh and nutritious Colorado ingredients creatively combined by talented local chefs. Competing food trucks must be registered as members of Colorado Proud, meaning they utilize locally grown, raised and processed food and agricultural products, promoting Colorado's economy through support of local farmers, ranchers, greenhouses, manufacturers and processors. 

This year, chefs have been asked to feature Colorado-grown sweet corn or honey produced here in the centennial state. 

This year, five food trucks are hoping to wow guest judge Brother Luck, who is filling in for Gov. Jared Polis, and event attendees with sample-sized dishes created from Colorado Proud ingredients. Luck will award the Governor’s Plate to the winner, while the crowd will crown the People’s Choice Award.

"We know this is one of Governor Polis’s favorite events, not just at the fair, but all year long, and he'll be missed,” said State Fair general manager Andrea Wiesenmeyer. “However, we are absolutely thrilled to have the incredible chef Brother Luck step in as our guest judge! We know he'll bring a fantastic perspective, and we can't wait to see which delicious dish he chooses for the Governor’s Plate award."

Brother Luck is an acclaimed chef, entrepreneur, and hospitality consultant based in Colorado Springs. With over two decades of experience, he has built award-winning restaurants from the ground up and dedicated his career to mentoring others. Brother Luck has been featured nationally on programs including Top Chef, The Rachel Ray Show, Beat Bobby Flay, and Chopped.  

The following food trucks will compete to win the Governor’s Plate and People’s Choice awards:

  • Mother Smothers (Pueblo) is serving a Pueblo green chile cheesy and creamy corn dip served with corn chips.
  • Stoke Pizza (Pueblo) is creating a wood-fired pizza made with ingredients from local Colorado farmers, including Colorado Proud honey. 
  • MunchKings (Pueblo) will be making an enchilada featuring corn tortillas topped with an award-winning green chile. 
  • Mollie & Co (Pueblo) will enter the competition with a honey-sweetened green chile and peach  ice cream served with dark chocolate. 
  • MC2 Ice Cream Truck (Arvada) is making a honey-goat cheese cheesecake ice cream swirled with freeze-dried corn streusel, served in a honey cornbread cone and finished with shattered Pine Nut brittle and Bing cherry pearls.

Concert tickets purchased throughAugust 21, 2025, include general admission to the Fair. Deals and discounts are also available.
