Watermelon Feta Salad

Ingredients
- 1/4 cup extra-virgin olive oil
- 2 Tbsp. red wine vinegar
- 1/2 tsp Kosher salt
- 3 cups cubed seedless watermelon
- 1 cup chopped cucumber
- 1 cup crumbled feta (about 6 oz.), or more to your liking
- 1/2 cup coarsely chopped mint, plus more for garnish
- 1/2 cup thinly sliced red onion
- Flaky sea salt (optional)
Directions
- In a small bowl, whisk oil, vinegar, and kosher salt.
- Add watermelon, cucumber, feta, mint, and onion and toss to coat in dressing.
- Top with more mint and sea salt (if using).
