Prep time: 10-15 minutes
Cook time: On low: 8 hours. On high: 4 hours
Ingredients
- 4-6 chicken breast halves (thawed, browned if desired)
- 1 cup of sliced carrots
- 2 tbsp of olive oil
- 2-3 small potatoes, cubed
- 1 cup of diced celery
- Salt and pepper to taste
Directions
- Brown the chicken if desired before adding it to the slow cooker. This step is optional.
- Place the sliced carrots, cubed potatoes, and diced celery at the bottom of the slow cooker.
- Add the chicken breasts on top of the vegetables.
- Pour the olive oil or other flavor option (see below) over the chicken and vegetables. Stir to combine.
- Cook: Cover and cook on low for 8 hours or on high for 4 hours
